可惜十多年前,還來不及去孝順她時,姨媽便不幸病逝了

多年也沒有【愛心芋頭糕】,但今年突然有好友送了一個只用了3次便不用的蒸爐給我,再附送兩大個國內特產【檳榔芋】給我,新年又就快到.芋頭,蒸爐,新年.我立即便聯想到,不如就整我最愛的【芋頭糕】啦

材料:
芋頭 --- 1500g(約2斤半切粒)
臘腸 --- 4條(出水後切粒)
蝦米 --- 大半飯碗(浸水後濾乾)
冬菇 --- 8粒(浸軟後切粒)
瑤柱 --- 半碗(浸軟再折成絲)
漿糊材料:
粘米粉 --- 2cup(約250g李祥和牌最佳)
生粉 --- 1 cup(約150g)
澄麵 --- 2湯匙
水 --- 2cup
調味料:
五香粉 --- 2茶匙
白胡椒 --- 2茶匙
豉油 --- 2湯匙
鹽 --- 3茶匙
糖 --- 2茶匙

1) 下油,中小火先炒香臘腸及蝦米至出油,再加入冬菇粒,下1茶匙五香粉,炒香.拿起備用.

2)原鑊再下少許油,下芋頭粒中少火炒,再加入1茶匙五香粉,炒至少許金黃.

3)加入5cup水再煮約5-10分鐘,剛剛熟便可熄火.(注意要用中小火煮,及不要煮得過稔.若有冬菇水,蝦米水可加入代替普通水)

4)拿起1/4的芋粒打成泥(或用手壓成泥)

5) 把芋泥放回芋粒中。

6) 伴勻的芋粒及芋泥.

7)再加入九成已炒香了的臘腸,冬菇,蝦米伴勻.再用篩把漿倒入.

8)伴勻漿糊,下些鹽,糖,胡椒,豉油調味.

9)芋頭漿倒入已輕塗油的器皿,再用餘下一成炒香的臘味,及瑤柱絲鋪面.

10) 鍚紙盤網上說可以不用塗油,但我也塗了一點.

12)蒸好了!未雪已經很挺身,正!芋頭糕要放室溫完全乘涼後才可放入雪櫃,否則很易壞.有冬菇的芋頭糕不可放太久,最多一,兩個星期.

請問生粉係咪鷹栗粉定係薯粉呀?
如果不加入生粉同澄麪是不是加入粘米粉代替謝謝。

理論上係但未試過!其實芋頭糕我覺得一定要加粟粉同澄麵,唔係唔夠實!
