Robuchon" 任職,小妹一知道便即時向他請教那個【海膽菠菜意粉】的做法,估不到其實十分簡單,第一次煮便十分成功!在這裡也跟大家分享一下這個「星級食譜」啦.

海膽 --- 1盒
菠菜 --- 1包
忌廉
--- 500ml(Whipping Cream)
芝士 --- 120g (Parmesan Cheese)

1)芝士加入忌廉,用最慢火煮20分鍾,其間不時攪勻以防黐底.

2)煮好了的忌廉便是白汁了.(一定要慢火不要燒焦)

3)用
篩將白汁隔一次

4)篩完的白汁更滑,備用.
5)下3茶匙鹽,少許橄欖油,開蓋煮意粉至7成熟.隔水備用(煮意粉水夠鹹,之後不用再調味).

6)下少許油,炒勻菠菜,下少許鹽.

7)轉中小火,加入白汁,略煮一會.不喜歡白汁太杰可以加入小量水或湯開稀(我這次沒有加水).

8)加入意粉,炒勻收汁,最後加入一半海膽炒勻.
9)上碟後再將另一半海膽鋪上面,即成!
嘩嘩嘩!!!真是好吃到要嘩嘩聲!這個平時要3,4百元一位的海膽意粉,以幾十元價錢便可以在家吃到了.是不是真的很容易做啦?那個白汁,亦可以煮意大利飯,及其他白汁意粉啦.正正正!
