今次的敗婦聚會,早於個多月前已經預約.BEAR太太知有一位四川菜名廚「明師傅」可以上門煮私房菜,於是便安排到我家做了.太好了,又可以偷師,個人又喜歡吃川菜

「明師傅」其實姓周,是桂林人.入廚多年,曾於廣州,深圳及香港做大廚.最擅長煮川菜及湘菜.他是一個好好笑容的大廚,他一面煮我一面跟他閒聊兼偷師.他知我懷孕,原來他太太也有了6個月BB了,第一胎.他快做爸爸,心情十分興奮

師傅所買的食材絕不馬虎,用料十分好及新鮮.他用「嘉美雞」去做口水雞.

又有條兩斤多重的桂花魚去便水煮魚,洗,切,劏師傅自己一手包辦.

師傅也自備他的私伙刀,他的刀真是很鋒利很好用...令到我想把自己的刀全換掉

配菜的洗洗切切,也是師傅包辦.他喜歡一面煮一面喝喝啤酒,你有心的可以買幾罐慰勞他一下.

他的刀功真是很好,他切的配菜也很整齊.最喜歡的便是師傅一面煮一面清潔,所以廚房十分企理乾淨.

切好的蔥頭,蒜,紅辣椒用作口水雞之用.

還買了當做的大奄仔蟹做香辣蟹,十分生猛.又多膏又多肉.今天要破戒吃少少啦...

劏好的蟹用鋪上少許生粉,防止蟹膏流失.

走油啦!平時在家很少做炸物,今次師傅一早叫我準備1.5公升的油.我的生鐵鑊出場啦

豬耳他早一天便要準備,上來再調醬加功.

這時一眾敗婦也到了,先來一杯香檳.新買的 Le Creuset wine charm 即時被開光.

開飯啦!先有【私房口水雞】.這可說是我吃過最好吃的口水雞,雞肉嫩滑,醬汁香辣而不油膩.超正啦

這個【紅油拌耳片】又開胃又好吃,我自己吃得最多.我一直遊說師傅用我的LC廚具,可是他全都選不上,這kiwi方碟是唯一被他「寵幸」的

為了迎合一些不太吃辣的朋友,師傅準備了【糯米蒸豬肉】.糯米鋪在豬肉上面蒸,這個也要早一天準備,再來蒸45分鐘.這刻我的 Miele 蒸爐便大派用場了.糯米夠味,軟硬適中.半肥瘦的豬肉入口即融,好正啦
