自己其實並不是對曲奇很愛好的,但自從在中環意大利扒房 Bistecca 吃過他們的碎朱古力曲奇後,真是驚為天人

材料:
牛油 --- 230g(Butter)
砂糖 --- 170g(Sugar)
啡糖 --- 150g(Brown sugar) (兩種糖份量我比原食譜減了1/4,少甜一些)
蛋 --- 2隻(攪勻)
中筋麵粉 --- 313g(All purpose flour)
燕麥 --- 114g(Oatmeal)
鹽 --- 2。5g
泡打粉 --- 4g(Baking powder)
梳打粉 --- 5g(Baking soda)
松果 --- 75g(Pine Nuts)
碎朱古力 --- 440g(Chocolate chips)

1)牛油室溫融軟,加入糖及啡糖。

2)用慢速度用機攪勻(約6-8分鐘)。

3)再慢慢加入雞蛋,繼續攪勻。

4)至軟身鬆身平均

5)加入麵粉,燕麥,鹽,梳打粉及泡打粉,繼續用慢速打勻。

6)最後加入碎朱古力,松果。(自己今次買不到松果)

7)用慢速打勻,備用。

8)預熱焗爐至175度,再將攪好的材料搓成約直徑2CM圓球狀,放在牛油紙上。

9)將曲奇放入焗爐,先焗6分鐘,再拿出,將盤裡面轉到外面再焗6分鐘。(這樣焗才不導致放在內面的曲奇過焦,而外面的曲奇不夠火喉,比較平均)

10)焗完後的曲奇,拿出乘涼幾分鐘至硬身,即成。

這個份量,也夠做6,7打曲奇。

待完全乘涼才蓋蓋儲好,若天氣乾爽最多可存放3星期的。若其間曲奇稔身了,可以再放入焗爐用180度火焗一會至硬身再吃。
