材料:
田雞---5隻(斬件一開四)
薑---4片
蔥---1小棵(切段)
乾辣椒---7隻(吃得辣可多加1,2隻指天椒,因乾辣椒本身不太辣)
調味料:
老抽---5湯匙
豉油---1湯匙
蠔油---2湯匙
紹酒---2茶匙
糖---3茶匙
水---150ml
生粉水:
生粉---2茶匙
水---1湯匙
1)中火下油,下薑片,少許蔥段及辣椒炒香。
2)加入田雞,炒勻(約30秒)。
3)轉中小火,加入老抽,豉油,蠔油,紹酒炒勻。再加入水和糖!攪勻及煮滾至約煮2分鐘至田雞8成熟。
5)最後加入剩下的蔥段。
6)蓋上蓋,熄火焗1分鐘!即成!
